Date Me Chicken is the newer cousin of the internet’s Marry Me Chicken. Instead of a creamy sun-dried tomato sauce, the crispy chicken thighs sit in a glossy pan sauce of Medjool dates, green olives, lemon and thyme. The dates melt into the sauce and balance the salty olives and sharp lemon. It’s all done in one skillet in about 50 minutes.

It isn’t a Gordon Ramsay recipe, but it’s built the way he builds a pan sauce: sear the meat hard, soften aromatics in the fat that’s left, deglaze with wine to lift the browned bits, then let it reduce.

Ingredients

For the chicken

  • 8 bone-in, skin-on chicken thighs (about 1.2 kg)
  • 1 tsp fine sea salt
  • 1/2 tsp freshly ground black pepper
  • 2 tbsp olive oil

For the date and olive sauce

  • 3 shallots, thinly sliced
  • 3 garlic cloves, thinly sliced
  • 120 ml dry white wine
  • 1 lemon, thinly sliced
  • 80 g pitted green olives, halved
  • 150 g pitted Medjool dates, halved
  • 250 ml chicken stock
  • 2 tsp fresh thyme leaves, plus extra to serve
  • Cooked couscous or rice, to serve

Why Medjool dates

Medjool dates are large and very soft, so they break down into the sauce and give it body and a caramel sweetness. Drier date varieties stay chewy and never really melt. If yours are a little firm, soak them in hot stock for 10 minutes before adding them.

Method

  1. Sear the chicken. Pat the thighs very dry and season them. Heat the oil in a large lidded skillet over medium-high heat. Lay the thighs in skin-side down and leave them alone for 8–10 minutes, until the skin is crisp and deep golden. Flip, cook 5 minutes more, and move them to a plate. Work in two batches if they don’t fit in one layer; crowded chicken steams instead of browning.

  2. Soften the shallots and garlic. Pour off all but 2 tablespoons of fat. Turn the heat to medium, cook the shallots for 3–4 minutes until soft, then add the garlic for 30 seconds.

  3. Deglaze. Pour in the wine and scrape up all the browned bits from the bottom of the pan. Let it bubble for 2–3 minutes until reduced by about half.

  4. Add the dates, olives and lemon. Add the lemon slices, olives, dates, stock and thyme, and bring to a lively simmer. The dates will start to soften and thicken the sauce within a couple of minutes.

  5. Simmer skin-side up. Nestle the chicken back in, skin facing up and above the liquid so it stays crisp. Cover and simmer gently for 20–25 minutes, until the chicken reaches 74°C (165°F) and the sauce is glossy.

  6. Taste, then serve. Taste the sauce before adding any salt; the olives and stock are already salty. Rest the chicken for 5 minutes and serve it over couscous with plenty of sauce, extra thyme and lemon wedges.

Swaps

  • Boneless thighs: boneless, skinless thighs work and cook faster; simmer them for 12–15 minutes. You lose the crispy skin, but the sauce carries the dish.
  • Chicken breasts: use 4 bone-in, skin-on breasts and simmer for 15–18 minutes, checking the temperature early.
  • No wine: use the same amount of extra stock plus 1 teaspoon of lemon juice.
  • More bite: add a spoonful of capers with the olives.

What to serve with it

Couscous is the best match because it soaks up the sauce. Rice, crusty bread or mashed potatoes work too, and a simple green salad balances the richness.

Leftovers

Keep leftovers in the fridge for up to 3 days. Reheat them covered in a skillet over low heat with a splash of stock; the microwave softens the skin. You can also make the sauce a day ahead, then sear the chicken fresh and finish it in the reheated sauce.

Instructions

01
Sear the chicken
Pat the thighs dry and season with salt and pepper. Heat the olive oil in a large heavy skillet over medium-high heat until shimmering. Sear the thighs skin-side down for 8-10 minutes until crisp and deeply golden, flip and cook 5 minutes more, then transfer to a plate.
02
Soften the shallots
Pour off all but 2 tablespoons of fat. Reduce the heat to medium, add the shallots and cook 3-4 minutes until soft and translucent, then stir in the garlic for 30 seconds until fragrant.
03
Deglaze with wine
Pour in the white wine and scrape up every browned bit from the base of the pan. Simmer 2-3 minutes until reduced by about half.
04
Build the date-olive sauce
Add the lemon slices, olives, dates, chicken stock and thyme. Stir and bring to a lively simmer; the dates will start to soften and gloss the sauce within a couple of minutes.
05
Simmer until done
Nestle the thighs back into the pan, skin-side up. Cover and simmer gently for 20-25 minutes until the chicken registers 74C (165F) and the sauce has thickened to a glossy glaze.
06
Serve
Rest 5 minutes, then serve over fluffy couscous with plenty of pan sauce, extra thyme leaves and lemon wedges.

Chef Tips

  • Pat the thighs thoroughly dry before seasoning — moisture is the enemy of a golden, crispy crust.
  • Sear in two batches if needed; crowded chicken steams instead of browning.
  • Taste before salting the sauce: olives and stock both bring salt, while the dates bring sweetness.
  • Use soft Medjool dates — drier varieties stay chewy and never melt into the sauce.
