Chocolate and raspberry is one of those pairings that never gets old: the sharp fruit cuts right through the richness. This cake layers moist chocolate sponge with a thick raspberry compote and a raspberry whipped cream, then finishes it with a shiny dark chocolate ganache. It’s my celebration cake, inspired by the kind of classic flavor pairings Gordon Ramsay favors rather than one of his own recipes.
The full quantities and timings are in the recipe card below. Here’s what makes it work.
The four parts
- Chocolate layers: a moist cocoa sponge that gives the cake its backbone.
- Raspberry compote: berries cooked down with sugar until thick and jammy. It goes on each layer before the cream.
- Raspberry cream: whipped cream stabilized with a little mascarpone or cream cheese, so it holds its shape between the layers instead of weeping.
- Ganache: poured over the top for a glossy finish.
All four can be made ahead, so on the day you only need to stack and pour.

Avoiding a soggy cake
The most common problem with fruit-and-cream cakes is moisture seeping into the sponge. Three things prevent it:
- Let the cake layers cool completely before assembling. Warm cake melts the cream.
- Cook the compote until it’s properly thick, then let it cool before spreading. A runny compote soaks straight in.
- Use the stabilized cream. Mascarpone or cream cheese in the whipped cream keeps it firm for days.
Ingredient notes
- Raspberries: fresh give the brightest flavor. Frozen work well too; thaw and drain them, simmer the compote a little longer, and add a touch more sugar since frozen berries taste less sweet.
- Chocolate: use a good dark chocolate (60–70% cocoa) for the ganache. For a sweeter ganache, use 50–60%, or add a tablespoon of light corn syrup for extra shine.
- Flour: all-purpose flour gives structure; cake flour makes a lighter crumb. Spoon it into the cup and level it rather than scooping, or the cake can turn out dry.
- Room temperature: take the eggs and dairy out ahead so the batter mixes evenly.
Pouring the ganache
Let the ganache cool until it’s still pourable but no longer hot. Too hot and it melts the cream and runs off; too cool and it sets in ridges. Pour it onto the center of the chilled cake and nudge it toward the edges with an offset spatula.

Chef Tips
- Cool layers completely before assembling to prevent the cream from melting.
- Use mascarpone or cream cheese in whipped cream to help it hold between layers.
- Warm ganache slightly if too thick; let it cool a bit before pouring for a smooth sheen.
Variations
- Chocolate cherry: use cherries instead of raspberries.
- Extra fruity: spread a thin layer of raspberry jam under the ganache.
- Hazelnut: scatter finely chopped toasted hazelnuts between the layers.
- Mocha raspberry: fold a tablespoon of melted chocolate into the whipped cream.
- Gluten-free: use a 1:1 gluten-free baking blend; it may need a few extra minutes in the oven.
- Dairy-free: coconut cream instead of heavy cream, and vegan butter in the ganache.
Making it ahead
Bake the layers and make the compote 1–2 days ahead; wrap the layers tightly and refrigerate the compote. Assemble the cake a few hours before serving and keep it chilled. It keeps for 3 days in the fridge. Let it stand for 20–30 minutes before serving so the flavors come through.
