Opera cake is one of the great French patisserie classics: thin layers of almond sponge soaked in strong coffee syrup, stacked with coffee buttercream and dark chocolate ganache, then finished with a glossy chocolate glaze. It’s the kind of precise, elegant dessert Gordon Ramsay’s restaurants are known for, and this is my home-kitchen version, broken into steps you can spread over two days.

The full quantities and timings are in the recipe card below. Here’s how the parts fit together.

The components

  • Joconde sponge: a light almond sponge made with almond flour and whipped egg whites. It’s thin and flexible, and it soaks up syrup without falling apart.
  • Coffee syrup: strong espresso sweetened with sugar, brushed generously over each sponge layer.
  • Coffee buttercream: a silky Italian meringue buttercream flavored with espresso.
  • Ganache and glaze: dark chocolate, used both as a filling layer and as the shiny top.

A two-day plan

  • Day 1: bake the joconde, make the coffee syrup and the buttercream. Refrigerate the buttercream and wrap the sponge.
  • Day 2: bring the buttercream back to a soft, spreadable texture, make the ganache, assemble, chill and glaze.

Chilling the cake overnight after assembly also helps: the layers settle and the flavors blend.

Where it can go wrong

  • Flat sponge: whip the egg whites only to medium peaks and fold them in gently. Overwhipped whites are hard to fold, and rough folding knocks the air out.
  • Runny buttercream: for Italian meringue, the sugar syrup needs to reach about 240°F (115°C). A thermometer makes this reliable. If the buttercream looks split, keep beating; it usually comes together.
  • Dull or streaky glaze: heat the cream until just below boiling, pour it over chopped chocolate, wait 1–2 minutes and whisk until smooth. Strain it if needed, and pour it over a well-chilled cake.
  • Messy slices: chill the cake until firm, then cut with a sharp knife dipped in hot water and wiped dry between every cut.

Ingredient notes

  • Almond flour: use blanched almond flour for a light, pale sponge. It’s essential to the classic texture; you can replace part of it with ground hazelnuts, but swapping it all for regular flour changes the cake entirely.
  • Coffee strength: for a milder cake, use less espresso in the syrup or the buttercream.
  • Liqueur: 1 tablespoon of rum or Grand Marnier in the syrup adds warmth.
  • Chocolate: 60–70% dark chocolate balances the coffee best.
  • Dairy-free: vegan butter and full-fat coconut cream work, though the texture will be softer.

Instructions

01
Preheat oven
Preheat the oven to 425°F (220°C). Line a 9x13-inch rimmed baking sheet with parchment and lightly butter the paper.
02
Make the joconde batter
Whisk almond flour, all-purpose flour and 1/2 cup sugar; in another bowl beat 4 eggs and vanilla until light, fold in dry mix, then fold whipped 2 egg whites and melted butter gently to form batter.
03
Bake the sponge
Spread the batter evenly on the prepared sheet and bake 7–9 minutes until just set and lightly golden; cool slightly before trimming into three even rectangles.
04
Prepare coffee syrup
Combine the espresso and 1/4 cup sugar in a small saucepan, warm until sugar dissolves; stir in rum if using, then cool.
05
Make Italian meringue
Heat 1 cup sugar with 1/4 cup water to 240°F (115°C), meanwhile whip 4 egg whites to soft peaks, then slowly pour hot syrup into whites while whipping until glossy and cooled.
06
Finish buttercream
With mixer running on low, add softened butter cubes to the cooled meringue in small pieces until you have a silky buttercream; beat in dissolved espresso.
07
Prepare ganache
Heat cream until scalding, pour over chopped chocolate, let sit 1–2 minutes then whisk until smooth; stir in butter for added shine and let cool slightly.
08
Assemble layers
Place first sponge layer on a board, brush with coffee syrup, spread a thin layer of coffee buttercream, repeat with remaining layers reserving buttercream for topping.
09
Glaze and set
Chill the assembled cake briefly then pour warm ganache over the top, spreading to edges for a smooth finish; refrigerate until ganache is set before slicing.

Chef Tips

  • Whip egg whites to medium peaks to keep the joconde light and airy.
  • Warm your knife under hot water and dry between slices for clean cuts.
  • Use 60–70% dark chocolate for balanced bitterness that pairs with coffee.

Variations

  • Nuttier: fold 1/4 cup finely ground toasted almonds into the sponge.
  • Double chocolate: use chocolate buttercream instead of coffee.
  • Petits fours: cut the finished cake into small squares for a dessert platter.

Storage

Keep the assembled cake in the fridge for up to 3 days. Well wrapped, it freezes for up to a month; thaw it overnight in the fridge.
