A marble cake is two batters, vanilla and chocolate, swirled together in one pan so every slice shows a different pattern. This one has a buttery vanilla crumb, a rich cocoa ribbon, and a shiny chocolate ganache poured over the top that also keeps the cake moist. It’s a classic home bake rather than a Gordon Ramsay recipe, and the full quantities are in the recipe card below.

How to get a clear marble pattern

The most common mistake is swirling too much, which blends the two batters into one muddy brown.

  1. Spoon alternating dollops of vanilla and chocolate batter into the pan, like a checkerboard.
  2. Drag a knife or spatula through the batter once or twice in a loose figure-eight. That’s it.
  3. Resist the urge to keep swirling. Fewer swirls means bolder, clearer ribbons.

Ingredient notes

  • Flour: all-purpose flour gives a sturdy, tender crumb. For a lighter cake, replace up to 1/4 cup with cake flour.
  • Butter: unsalted gives the cleanest flavor. If you use salted, cut back on the added salt.
  • Sour cream: keeps the cake moist. Greek yogurt is a good substitute. Whole milk works too, but add a tablespoon of melted butter or an extra yolk to make up the richness.
  • Cocoa: use unsweetened natural cocoa for the chocolate batter. Dutch-processed cocoa changes the acidity and can slightly affect the rise.
  • Ganache: bittersweet chocolate and heavy cream give the best shine and balance. Milk chocolate makes it sweeter and softer.

Baking tips

  • Take the butter and eggs out 30 minutes ahead so everything mixes evenly.
  • Once you add the flour, mix only until it’s combined. Overmixing makes a tough cake.
  • Test the thickest part with a skewer. It should come out with a few moist crumbs, not wet batter.

Instructions

01
Preheat oven
Preheat the oven to 350°F (175°C) and grease a 9-inch bundt pan or 9x5-inch loaf pan.
02
Mix dry ingredients
Whisk the flour, baking powder, and salt together in a medium bowl and set aside.
03
Cream butter
In a large bowl, cream the softened butter and granulated sugar until light and fluffy, about 2–3 minutes.
04
Add eggs
Add the eggs one at a time, mixing until combined, then beat in the vanilla extract.
05
Combine batter
Alternate adding the dry ingredients and the milk and sour cream to the butter mixture, mixing until just combined and smooth.
06
Make chocolate batter
Scoop out 1 cup of the vanilla batter into a separate bowl and stir in the cocoa powder, 2 tablespoons sugar, and 2 tablespoons milk until smooth.
07
Layer and swirl
Drop alternating spoonfuls of vanilla and chocolate batter into the prepared pan and swirl gently once or twice with a knife for a marbled effect.
08
Bake the cake
Bake until a skewer inserted into the center comes out with a few moist crumbs, about 45–55 minutes depending on pan and oven.
09
Make ganache
Warm the heavy cream until steaming, pour over chopped chocolate, let sit 1 minute, then stir until smooth and stir in the butter; pour over the cooled cake.

Chef Tips

  • Bring eggs and dairy to room temperature for even mixing and better rise.
  • Swirl gently—overmixing destroys the marble pattern and makes the cake dense.
  • Use a skewer to check doneness; remove cake from pan after it cools 10–15 minutes.

Pan options

This works in a loaf or bundt pan too. A 9×5-inch loaf takes about 50–60 minutes and a bundt about 45–55 minutes; check with a skewer. The batter also makes good marble cupcakes.

Variations

  • Nutty: fold 1/2 cup chopped toasted hazelnuts or almonds into the vanilla batter.
  • Mocha: add 1 teaspoon instant espresso powder to the chocolate batter.
  • Orange: fold a tablespoon of orange zest into the vanilla batter and use dark chocolate ganache.
  • Simple finish: skip the ganache and dust with powdered sugar.

Storage

Once the ganache has set, keep the cake covered at room temperature for 2 days or in the fridge for up to 5 days. Bring slices back to room temperature before serving. The un-glazed cake freezes well for up to 2 months; thaw it overnight in the fridge and add the ganache before serving.
