An icebox cake is the easiest “cake” you’ll ever make, because the fridge does the baking. Plain tea biscuits are layered with a tangy lemon cream, and overnight they soak up moisture from the filling and turn soft and cake-like. You slice it straight from the dish. About 25 minutes of work, then a night in the fridge.

This is a classic no-bake dessert rather than a Gordon Ramsay recipe. What I took from him is his insistence on fresh citrus: real lemon juice and zest are the whole point here, and bottled juice makes it taste flat.

Ingredients

For the lemon cream

  • 2 cups (480 ml) heavy whipping cream, cold
  • 8 oz (225 g) cream cheese, softened to room temperature
  • 1 can (14 oz / 396 g) sweetened condensed milk
  • 3/4 cup (180 ml) fresh lemon juice (about 4–5 lemons)
  • 2 tablespoons fresh lemon zest (about 2 lemons)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon fine salt

For the layers and topping

  • 40–48 rectangular tea biscuits (such as Marie or Arrowroot), about 2 sleeves
  • 1 cup (120 g) crushed tea biscuits, for the crumble
  • 2 tablespoons (28 g) unsalted butter, melted

How the filling sets without baking

When lemon juice meets sweetened condensed milk, the acid thickens the milk proteins, the same way it does in a key lime pie. That’s why the filling firms up in the fridge without eggs or gelatin. The whipped cream folded in at the end makes it light enough to slice cleanly.

Method

1. Make the lemon base

Beat the softened cream cheese on its own first, until completely smooth. Lumps left now won’t disappear later. Then add the condensed milk, lemon juice, zest, vanilla and salt, and beat until thick and glossy. You’ll feel it thicken as the lemon goes in.

2. Fold in the whipped cream

In a separate, chilled bowl, whip the cold cream to stiff peaks. Fold it into the lemon base in three additions with a spatula, using a light hand, until there are no white streaks.

3. Make the crumble

Crush the extra biscuits in a zip-top bag with a rolling pin, leaving some larger pieces for texture. Toss them with the melted butter.

4. Layer it up

Line a 9×13-inch dish with parchment, leaving some hanging over the long sides so you can lift the cake out later. Spread a thin layer of lemon cream on the bottom, then a single layer of biscuits. Spread a third of the remaining cream over them. Repeat twice more, finishing with a smooth layer of cream.

5. Top and chill

Scatter the crumble over the top, cover tightly and refrigerate for at least 8 hours. Overnight is better. If you cut it too early, the biscuits are still crisp and the layers slide apart.

6. Slice

Lift the cake out using the parchment and cut it into 12 squares with a sharp knife, wiping the blade between cuts for neat layers. Serve it cold.

Swaps and storage

  • Graham crackers work in place of tea biscuits, one for one. The cake will be a little sweeter and more crumbly.
  • Fridge: covered, it keeps for 3–4 days. The biscuits keep softening, so it’s best on the first or second day.
  • Freezer: wrap the dish in plastic wrap and foil and freeze for up to a month. Thaw overnight in the fridge.

Beat the softened cream cheese until completely smooth and lump-free. Add the sweetened condensed milk, fresh lemon juice, lemon zest, vanilla extract, and salt, and beat until thick, glossy, and silky.
02
Whip and fold in the cream
In a separate chilled bowl, whip the cold heavy cream to stiff peaks. Gently fold the whipped cream into the lemon base in three additions until billowy and mousse-like with no streaks.
03

Place the biscuits for the crumble in a resealable bag and crush with a rolling pin into coarse crumbs. Toss with the melted butter until evenly coated.
04
Layer biscuits and lemon cream
Spread a thin layer of lemon filling in a 9x13-inch dish. Arrange a single layer of tea biscuits over it, then spread about one-third of the remaining filling over the biscuits. Repeat two more times, ending with a smooth layer of lemon cream.
05
Top with crumble and chill
Scatter the buttery biscuit crumble evenly over the top. Cover tightly with plastic wrap and refrigerate for at least 8 hours, or overnight, until the biscuits soften into tender, sliceable layers.
06
Slice and serve
Cut into 12 squares with a sharp knife, wiping the blade between cuts for clean layers. Serve straight from the fridge.

Chef Tips

  • Start with room-temperature cream cheese and beat it alone first — lumpy cream cheese never smooths out later.
  • Don't rush the chill: 8 hours is the minimum, overnight is better for tender, sliceable layers.
  • Use fresh lemon juice — bottled juice tastes flat and dulls the bright flavor.
  • Line the dish with parchment with an overhang on the long sides to lift the whole cake out for clean slices.
